We refer to "railroaded" to the way the fabric pattern is woven at the upholstery fabric mill. If you detail the image below, the regular sofa on the left has the fabric pattern running up the roll which is the normal way upholstery fabric is milled. The "railroaded" image on the right means the fabric design (stripes) across the roll, from one side of the fabric to the other one.
